A composed, low-risk bistro dinner on Granby's main street: good meal, good room, good service.

My Take

Pavane is a solid place. I’d put it in the same league as King Alexandre: good meal, good room, good service. For me, it’s a “one and done” spot—not because anything is wrong, but because it doesn’t feel like it needs to go into the regular rotation. I wouldn’t steer anyone away from it. If you’re in Granby and want a composed dinner with low risk, it does the job.

Public Knowledge

Pavane, at 120 rue Principale in downtown Granby, is listed in the 2026 MICHELIN Guide (traditional cuisine, $$), which describes it as a buzzing bistro on the town's main street (MICHELIN Guide; M105). It is run by chef François Côté, formerly of Toqué! and Joe Beef, and sommelier Elsie Gélinas, who oversees the wine and cocktail lists and the dining room (Tastet; Tastet). Tastet's 2022 review highlighted generous bistro classics such as steak frites, pork roasts, tartare and charcuterie, rotating specials, and stock-based cream sauces, in a Parisian-bistro room with English-pub touches (Tastet).
