My Take
A friend who grew up in Falls Church sent me here and wrote my order on a post-it: Bún bò Huế, Không huyết — beef soup from Huế, no blood. If phở at its best is Mozart, bún bò Huế is Rite of Spring Stravinsky: wild, rich, pungent and spicy, with beef shank, oxtail and pig knuckle in a broth of lemongrass, shrimp paste, garlic and chili oil, and a riot of herbs on the side — perilla and Vietnamese coriander among them. Finding it is half the adventure: it's tucked inside one of Eden Center's indoor malls, behind a nondescript door. Write your order on a post-it and hand it over. I've since had it with the blood; not my thing, but cross out "Không huyết" if you're game.
Public Knowledge
Phung Hoang is a small restaurant inside one of Eden Center's indoor malls, listed by the center as a Vietnamese noodle-soup spot whose customer favorite is bún bò Huế (Eden Center). Regulars on the DC food forum DonRockwell have long called the soup its specialty (DonRockwell). Its online footprint was always small.
