Antidote FoodLab
An adventurous Sherbrooke meal in a former textile factory — where I'd take visiting family looking for a "how did they do that?" dinner.

My Take
I was really impressed by this place. If my brother or sister were visiting from New York or San Francisco and wanted something that’s a bit more adventurous, this is where I’d take them. I’m pretty sure they’d be happy, and that’s saying something. On the other hand, it’s not where I’d go for a classic “Québec” experience. Angela isn’t in a hurry to go back, and I understand why. Meals like this can be most surprising the first time, and I’ve also heard the menu doesn’t change much. I do want to return, but I’m waiting for the right dining partner—someone who’s looking for that “how did they do that?” kind of meal.
Public Knowledge
Antidote FoodLab occupies a former textile factory in downtown Sherbrooke, where chef-owner Luc Vaillancourt runs an inventive menu that Tastet places between terroir cooking and molecular gastronomy (Tastet). Tastet’s review praised the cooking, service, decor, and wine list, singling out the trout, the duck breast, and a carrot-cake dessert (Tastet). In an older 2014 La Presse review, Marie-Claude Lortie liked its reinvented Québec classics such as a beef-cheek pâté chinois, but found the mushroom risotto and desserts clumsy; dishes from that visit may no longer be on the menu (La Presse).
